Spigot have announced they should have a 1.11 build released on Saturday 19th or Sunday 20th November: https://www.spigotmc.org/threads/minecr ... ap.192111/
At the weekend I'll be watching out for Spigot to release their first 1.11 builds; when they do, I'll build one and push it to the test server, and see who fancies helping test it out.
As usual, we won't rush in to upgrading the main server until we're happy that all seems to be working well on the test server, with no big latency issues and the most important plugins (Grief Prevention, NoCheatPlus etc) working well and not misbehaving.
I'll post updates to this thread when there are any.

Things mostly seem OK with interactions with our key plugins, nothing is looking too bad.
However, there have, somewhat expectedly, been some Spigot bugs surfacing and being fixed - for instance, standing on pressure plates crashing the server(!), so I'm glad we held off a bit and didn't rush in to it.
I'll see how things are tomorrow, I might manage to upgrade us then assuming Spigot is looking stable and I have some free time - if not, I expect it to be some time in the coming week.

I'm building the latest Spigot 1.11 release (build 1037) now, and will push that to the test server shortly for a final test.
Assuming that all looks good, and no other important Spigot / MC bugs have surfaced in the meantime, we'll be good for upgrade later today or tomorrow I think - but as usual I'd prefer not to rush it until I'm relatively confident things won't be too fucked.
One big thing to be aware of: MC 1.11 brings a new feature (maxEntityCramming) that stops too many entities being crammed in a single block, which can help reduce lag. It does mean, though, if you have a silly number of mobs/animals crammed into a single block, when your chunk is loaded after the 1.11 upgrade, *some of them will die*. Also, you won't be able to let a grinder accumulate silly numbers of mobs in a single block - which is a good thing.
The default value is 24 entities, but I will likely extend it a bit higher than that - perhaps 40 or 50.
